Observe her reactions while she talks and makes a conversation. Look at every tiny details about her from her facial expressions to body language to her emotions, commitment towards what she's saying. If you'll focus you will even found what she believes into and what her opinions are. Now what you do is that narrow down the topics which she loved to talk upon in your mind, something which was like lighting a matchstick near the inflammables. Do your research in those topics, find a common genre in all of them. Read something interesting about it & recent activities associated with it. And Now When you meet her next time, just ask an intriguing question to her. A question which arises curiosity in her even after all her knowings about that topic. A question which she understood quite well and knows something related to it but didn't know that exact answer towards it just for ex any philosophical topic. yeah just do that.

And Now just look at her when she starts explaining, expressing & talking.
Just look at her in her completeness, notice everything. and in my advice try to look at the dilation of her pupil's more often, cause that's the most beautiful thing I found in the ocean of bountiful beautiful things which is she right now. But those sparkling , talking & flickering eyes. Man!!!
I bet you'll get lost in her Trance as she will explain that thing to you.
